Chef Pascal Olhats: A Man Who Will Not Surrender

Pascal Olhats is an awesome French chef with a great restaurant down in Newport Beach. He’s also, coincidentally, one of my favorite people in the world and was responsible for my Man Bites World meal for France Day and also joined me on Belgium Day.

Well now, Chef Olhats is just trying to let people enjoy some final foie gras before the 2012 ban comes into place, but picketers don’t seem to want to let him. I’m personally against the ban, but won’t get into the reasons now (though for Bourdain’s take, click here and for his and Ruhlman’s, click here).

So while some have given up, since bad publicity is all restaurants need in a tough economic time, Pascal Olhats will not. Here’s an excerpt from an article in today’s OC Register:

“Some people eat peanut butter on their toast in the morning, but I eat foie gras,” said Olhats, whose menu features two liver dishes.

While Saturday’s protest disrupted his dinner service, Olhats said the campaign ultimately backfired.

“That night, I sold more foie gras than ever.”
